Donatella cannoli by pastry chef Andrea Jarosh

I was happy to hear that Andrea Jarosh, one of my favorite young pastry chefs was going to be bringing her skills to the 2011 New York Food and Wine Sweet event.   Andrea is a native New Yorker so it was no surprise that she decided to showcase a dessert with a rich history that’s also become quite popular recently.  If you think all cannoli have to be sugary sweet and heavy, you owe yourself a visit to Donatella restaurant to see what the real deal tastes like.  These cannoli are incredibly light and flavorful and have created a loyal following in Chelsea.  Watch the video of Andrea at the New York Food and Wine Sweet after the jump. Tarte tatin dessert from Junoon

When I asked Junoon’s Pastry Chef, who started in September 2010, whether she had to get approval from Executive Chef Vikas Khanna to add a new dessert to the menu, she responded blithely “not really, he trusts me”.  This anecdote speaks to the way Jenny Lee approaches her desserts at the one-Michelin-starred Junoon.   She seems to start with a mostly blank canvas and adds whatever elements she thinks will work to make the dish special.  The quince tart tatin is a perfect example.  This dish is really tart.  I mean, punch-you-in-the-jaw tart.   She could have easily just sweetened it up to taste like a Del Monte fruit cocktail and I’m sure some customers would have been fine with that.  Instead, the tart quince flavor was allowed to shine though.   The subtly flavored fennel ice cream takes a bit of the edge off to complete the dish. A few weeks ago I met with pastry chef James Distefano of the one-Michelin-starred Rouge Tomate.  The chef took me through one of his desserts and also explained a bit about the special nutrition requirements he works with when creating the sweet menu.

2011 New York Chocolate Show wrap-up

The 2011 New York Chocolate Show came to a close last night.  From Wednesday night’s opening fashion show to Sunday’s star-studded Top Chef cooking demos, there was a lot (of chocolate) to see.  Here are some of the highlights (in case you weren’t able to attend all 4 days).

The real reason Johnny Iuzzini is leaving Jean Georges

3-Star Michelin Pastry Chef Johnny Iuzzini receiving counsel from a stranger..

Eater reported yesterday that Johnny Iuzzini is leaving Jean Georges after 10 years.  This comes on the heels of two other three-Michelin, four-NY-TImes, starred chefs announcing their departures earlier this year–Michael Laiskonis from Le Bernardin and Dominique Ansel from Daniel.  Johnny certainly has been building his brand over the last few years as head judge of Top Chef: Just Desserts and generally being out and about at all the national food shows, like the New York Food and Wine event.
