Superb Seasonal Sorbets from James Distefano at Rouge Tomate

A few weeks ago I met with pastry chef James Distefano of the one-Michelin-starred Rouge Tomate.  The chef took me through one of his desserts and also explained a bit about the special nutrition requirements he works with when creating the sweet menu.

James works closely with an in-house nutritionist to make sure each individual dish, as well as the entire dessert menu meets certain nutritional requirements.  For example, there are total calorie limits for the complete dessert menu taken as a whole.

All the desserts I tried were just as satisfying as their less healthy counterparts.  I also left Rouge Tomate satisfied but without feeling stuffed or weighed down. If you’re looking to enjoy a decadent dessert made by a top pastry chef without too much artery hardening cream and butter, this is the place to go.
